Ano Ulam?1 Bicol Express
"Let me get this straight, your not going to blog about recipes or anything about pulutan really.. so what are going to blog about?" wife sez to me... Edi nga food pa rin, food na abot kaya at kayang kayang gawin ng typical na tao pareho natin. She says-" tanga bicol express ba naman hirap nun...?!!
Before we start... the essentials, knife, chopping board, kawali/wok and stove. Every one should have condiments bagoong/shrimp paste, patis/ fish sauce, toyo/soy sauce, asin/salt, paminta/pepper and suka/vinegar.
BICOL express pang tanga:
1k Baboy laman chopped into strips (choose pork with some fat and of course fresh don't be dumb)
5 cloves Bawang chopped
1 buo Onion chopped
1 kamatis buo chopped
2 teaspoon bagoong
2cups Gata/Coconut cream or juice
siling labuyo chopped (depende sayo kung gaano karami)
siling green chopped (mga lima/5)
gulay; sitaw or sigarilyas or both, i prefer. if u have pero kung wala edi wala
-Saute/gisain bawang sibuyas and kamatis then add pork
-add two teaspoons of bagoong gives the salty pulutan kick and some dash of patis and vinegar to add flavor, let it boil, dont mix -up yet, wait till some liquid has evaporated.
-cook until pork is tender, be sure that its tender and some of the pork fat has liquified
-have some common sense, cover the kawali if u can or lower the temperature of the stove to make sure the food don't get burnt.. PLEASE never leave the food especially if its your first time to cook.
-add 1 cup coconut juice or cream, let it boil
-add 2nd cup of coconut cream, let it boil add gulay if u have then garnish with all the sili
-mga 5 minutes boiling tapos ok na, don't over cook the coconut juice or cream because it solidifies into lumps.
Notes: sarap sawsawan ng patis
